Make the mixture: In a large bowl, combine ground turkey, mayonnaise, grated onion, egg, Dijon, garlic, smoked paprika, onion powder, oregano, salt, pepper, and parsley.
Mix gently with a fork or your hands until just combined. Don’t overwork it.
Form patties: Divide into 4 equal portions. Wet your hands and shape into patties about 1/2–3/4 inch thick.
Press a small dimple in the center to help them cook evenly.
Air fry: Place patties in a single layer in the basket. Spray the tops lightly with oil. Cook for 6–7 minutes.
Flip and finish: Flip, spray again, and cook another 5–7 minutes, until the internal temperature reaches 165°F (74°C).
Total time is usually 11–14 minutes, depending on thickness and your air fryer model.
Rest and serve: Let patties rest for 3 minutes. Serve in lettuce wraps with your favorite keto toppings.
