Preheat the air fryer: Set it to 400°F (200°C) for 3–5 minutes while you prep.
A hot basket gives you better sear and crisp edges.
Prep the broccoli: Toss florets with 1–1.5 tablespoons oil, 1/2 teaspoon salt, 1/2 teaspoon pepper, and 1/2 teaspoon garlic powder. Aim for light, even coating so it roasts, not steams.
Season the steaks: Pat dry with paper towels. Rub with 1 tablespoon oil, then sprinkle both sides with remaining salt, pepper, garlic powder, and paprika.
Press seasoning in so it adheres.
Start the broccoli: Add broccoli to the air fryer basket in a single layer. Cook at 400°F for 4 minutes to get it going.
Add the steaks: Scoot broccoli to the sides to make room. Lay steaks in the center without overlap.
Cook 6–8 minutes, flipping steaks halfway. Stir the broccoli once as you flip for even char.
Check doneness: Use an instant-read thermometer. Aim for 125–130°F for medium-rare, 135°F for medium.
Remember, temperature rises a few degrees while resting.
Make the garlic butter: While steaks finish, mix melted butter, minced garlic, and a squeeze of lemon. Add chopped herbs if using.
Rest and finish: Transfer steaks to a plate and rest 5 minutes. Toss broccoli with a spoonful of garlic butter.
Slice steaks across the grain and drizzle with remaining butter.
Serve: Plate steak with broccoli, finish with a pinch of flaky salt and extra herbs if you like.
