Preheat the air fryer: Set it to 375°F (190°C) for 3–5 minutes so the basket is hot. A preheated basket helps crisp the edges.
Mix the spread (optional): In a small bowl, stir together the cream cheese and Dijon. This adds a creamy, tangy layer that helps the cheese stick.
Assemble the roll ups: Lay a slice of ham flat.
Spread a thin layer of the cream cheese mixture (if using). Place half a slice of cheese near one edge. Sprinkle with garlic powder, onion powder, smoked paprika, and pepper.
Roll and secure: Roll the ham tightly around the cheese.
Secure with a toothpick through the seam so it doesn’t open in the air fryer. Repeat with remaining slices.
Prep the basket: Lightly spray the air fryer basket with oil to prevent sticking. You can also line it with a perforated parchment sheet made for air fryers.
Air fry: Arrange roll ups seam-side down in a single layer with space between each.
Air fry for 6–8 minutes, turning once halfway through. They’re done when the ham is browned and the cheese is just starting to ooze.
Rest briefly: Let them sit 1–2 minutes after cooking. This helps the cheese set slightly so the rolls hold together.
Serve: Remove toothpicks and serve warm with your favorite low-carb dip.
