Lightly spray the basket with oil so the patties don’t stick.
Make the spice blend: In a small bowl, combine 1¼ teaspoons salt, ½ teaspoon black pepper, 1 teaspoon dried sage, ½ teaspoon crushed fennel seeds, 1 teaspoon garlic powder, 1 teaspoon onion powder, ½ teaspoon smoked paprika, and a pinch of red pepper flakes if you like heat. Stir in ½ teaspoon baking soda.
Season the meat: In a large bowl, add 1 pound ground pork. Sprinkle the spice blend evenly over the meat.
Add 1 teaspoon apple cider vinegar and 1–2 teaspoons keto sweetener (optional). The vinegar brightens the flavor; the sweetener adds a subtle breakfast-style balance.
Mix gently: Use your hands to mix until the seasonings are evenly distributed. Don’t overwork the pork or it can become dense.
Aim for just-combined.
Shape the patties: Divide into 8 equal portions. With damp hands, form into patties about 2½ inches wide and ½ inch thick. Press a slight dimple in the center of each patty to prevent doming.
Arrange in the basket: Place patties in a single layer with a little space between them.
Work in batches if needed. Lightly mist the tops with oil for better browning.
Air fry and flip: Cook for 6 minutes, then flip. Air fry another 4–6 minutes, until the edges are browned and the internal temperature hits 160°F (71°C).
Total time is usually 10–12 minutes, depending on your air fryer and patty thickness.
Rest and serve: Let the patties rest 3 minutes so juices redistribute. Serve hot with eggs, avocado, or tucked into a keto-friendly breakfast sandwich.
