Prep the shrimp: Pat the shrimp dry with paper towels. Dry shrimp sear better and don’t steam in the air fryer.
Make the seasoning: In a bowl, mix olive oil, minced garlic, lemon zest, lemon juice, smoked paprika, red pepper flakes (if using), salt, and black pepper.
Toss to coat: Add the shrimp and stir until evenly coated.
Let sit for 5 minutes while you preheat.
Preheat the air fryer: Set to 390°F (200°C) for 3–4 minutes. Lightly spray the basket if sticking is a concern.
Arrange the shrimp: Place shrimp in a single layer in the basket. Avoid overlapping for even cooking.
Air fry: Cook for 5–7 minutes, flipping once halfway.
Shrimp are done when pink, opaque, and slightly curled into a loose “C.”
Finish with herbs: Transfer to a bowl and toss with chopped parsley. Taste and add a pinch more salt or a squeeze of lemon if needed.
Serve: Plate with lemon wedges. Great over brown rice, cauliflower rice, pasta, or a crunchy salad.
