Prep the shrimp: Pat shrimp dry with paper towels. Dry shrimp brown better and don’t steam in the basket.
Mix the seasoning: In a bowl, combine olive oil, garlic, paprika, salt, pepper, red pepper flakes (if using), oregano, and lemon zest.
Stir into a loose paste.
Coat the shrimp: Add shrimp to the bowl and toss until evenly coated. Squeeze in the lemon juice and toss again. Let sit for 5 minutes while the air fryer preheats.
Preheat the air fryer: Set to 400°F (200°C) for 3 minutes.
A hot basket helps prevent sticking and promotes caramelization.
Arrange in the basket: Place shrimp in a single layer with a little space between. Work in batches if needed. Do not crowd.
Air fry: Cook for 5–7 minutes, flipping once at the 3-minute mark. Shrimp are done when pink, opaque, and slightly firm with a gentle spring.
Finish: Transfer to a plate, squeeze with extra lemon, and sprinkle with fresh parsley or cilantro.
Serve: Enjoy immediately over salad greens, brown rice, quinoa, zoodles, or tucked into warm corn tortillas.
