Press the tofu: Drain the tofu and wrap it in a clean kitchen towel. Place a heavy pan or a few books on top and press for 15–20 minutes to remove excess moisture. This step is key for crisp edges.
Cut into bites: Slice the tofu into 3/4-inch cubes. Keep them uniform so they cook evenly.
Make the marinade: In a bowl, whisk soy sauce, maple syrup, vinegar, sesame oil, garlic powder, onion powder, paprika, and optional chili. Taste and adjust salt or sweetness as needed.
Toss the tofu: Add tofu cubes to the bowl and gently toss to coat. Let sit for 10–15 minutes. If you have more time, marinate up to 1 hour in the fridge.
Add the starch: Sprinkle cornstarch over the marinated tofu and toss again until every piece has a light, even coating. This is what makes them extra crisp.
Preheat the air fryer: Set to 390–400°F (200°C). Lightly spray or brush the basket with oil to prevent sticking.
Arrange and cook: Place tofu in a single layer with a little space between pieces. Air fry for 10–14 minutes, shaking or flipping halfway. Cook until deep golden and crisp at the edges.
Finish and serve: Taste a piece.
If you want more pop, sprinkle with a pinch of salt or an extra dash of soy sauce. Garnish with green onions, sesame seeds, or a squeeze of lime. Serve hot with your favorite dipping sauce.
