Prep the strawberries: In a bowl, toss diced strawberries with granulated sugar, lemon juice (if using), and 1/2 teaspoon vanilla. Let sit for 15–20 minutes to release juices.
Make the whipped cream: In a chilled bowl, whip heavy cream, powdered sugar, remaining 1/2 teaspoon vanilla, and a pinch of salt until soft peaks form.
Chill until ready to use.
Preheat the air fryer: Set to 350°F (175°C) for 3 minutes. Lightly spray the basket with oil or line with parchment designed for air fryers.
Cut the biscuits: Separate the biscuit dough and cut each biscuit into quarters to create bite-sized pieces.
Brush and sugar: Brush the dough pieces with melted butter. Sprinkle lightly with coarse sugar for extra crunch.
Air fry in batches: Arrange pieces in a single layer with space between them.
Air fry for 6–8 minutes, shaking the basket halfway, until golden brown and puffed. Time may vary by air fryer.
Cool briefly: Let the bites cool for 3–4 minutes. This helps them set and makes assembling easier.
Assemble: Split bites if you like, or keep them whole.
Spoon on macerated strawberries with some of their syrup. Top with a dollop of whipped cream.
Serve: Plate 3–4 bites per person, add extra berries and cream, and serve immediately while warm and crisp.
