Prep the shrimp: Pat shrimp very dry with paper towels. Dry shrimp brown better and won’t steam in the air fryer.
Make the marinade: In a bowl, whisk together olive oil, lime zest, lime juice, chili powder, smoked paprika, cayenne, cumin, garlic powder, salt, black pepper, and honey (if using).
Toss to coat: Add shrimp to the bowl and toss until evenly coated. Let sit 10 minutes while you heat the air fryer. A brief rest helps the flavors cling.
Preheat the air fryer: Set to 400°F (200°C) for 3–5 minutes. A hot basket helps with sear and prevents sticking.
Arrange the shrimp: Lightly spray the basket if sticking is a concern. Place shrimp in a single layer with a little space between them. Work in batches if needed.
Air fry: Cook at 400°F for 5–7 minutes, flipping halfway. Shrimp are done when pink, opaque, and curled into a loose C. Avoid tight O-shaped curls, which can mean overcooked.
Taste and finish: Sprinkle a pinch of salt if needed. Squeeze extra lime over the top and garnish with cilantro. Serve immediately with lime wedges.
