Preheat your air fryer to 375°F (190°C) for 3–5 minutes. A hot basket helps set the crust quickly.
Mix the dry ingredients. In a bowl, whisk almond flour, Parmesan, baking powder, garlic powder, onion powder, smoked paprika, and black pepper.
Add the wet ingredients. Stir in the egg until the mixture looks like a thick paste.
Fold in sausage and cheese. Use clean hands to mix until everything is evenly combined.
The mixture should be slightly sticky but hold together. If too wet, add 1–2 more tablespoons almond flour.
Form balls. Scoop about 1 tablespoon of mixture and roll into 1 to 1.25-inch balls. You should get about 22–26 balls depending on size.
Prep the basket. Lightly spray the air fryer basket with oil to reduce sticking.
Air fry in batches. Arrange balls in a single layer with space between them.
Cook for 9–12 minutes, shaking or turning once halfway, until browned and the internal temperature hits 160°F (71°C).
Rest briefly. Let them sit for 3 minutes. The carryover heat finishes the center and helps the crust firm up.
Serve warm. Pair with sugar-free ranch, mustard, or a quick spicy mayo.
