Prep the pork belly: Pat the pork belly cubes dry with paper towels. The drier they are, the crispier they’ll get.
Mix the seasoning: In a large bowl, combine salt, pepper, smoked paprika, garlic powder, onion powder, and chili powder or cayenne if using. Add the baking powder for extra crispness.
Coat the pork: Toss the pork belly cubes with oil until lightly coated.
Sprinkle the seasoning mix over the cubes and toss until every piece is evenly covered.
Preheat the air fryer: Set your air fryer to 400°F (200°C) for 3–5 minutes so it’s hot when the pork goes in.
Arrange in the basket: Place the cubes in a single layer with a little space between them. Work in batches if needed. Crowding reduces crisping.
Air fry—first cook: Cook at 400°F (200°C) for 12 minutes.
Shake the basket halfway through to flip and redistribute.
Render and crisp: Continue cooking for another 6–10 minutes, shaking every 3–4 minutes, until the edges are deep golden and crispy. Total time is usually 18–22 minutes, depending on cube size and your air fryer model.
Rest briefly: Transfer to a plate lined with paper towels and let sit for 2–3 minutes. This helps the crust set and excess fat drain.
Finish and serve: Squeeze a bit of lemon or lime over the top for brightness, sprinkle with herbs, and plate with your favorite keto-friendly sauce.
