Ingredients
  

  • 1 large flour tortilla (8–10 inches; whole wheat or gluten-free if preferred)
  • 2 eggs, scrambled (quick method below) or use liquid egg whites
  • 2 tablespoons shredded cheese (cheddar, Monterey Jack, or mozzarella)
  • 2 slices cooked bacon or 2 breakfast sausage links, chopped (optional; use pre-cooked to save time)
  • 2–3 tablespoons sautéed peppers and onions or fresh baby spinach (optional)
  • 1 tablespoon salsa or hot sauce (optional)
  • 1 teaspoon butter or a quick spritz of olive oil for the tortilla
  • Salt and pepper to taste

Instructions
 

  • Preheat the air fryer to 375°F (190°C) for 2–3 minutes. This helps the tortilla crisp fast and evenly.
  • Prep the eggs using the quick microwave scramble or use leftover scrambled eggs from the fridge. Keep them slightly soft—they’ll finish warming in the air fryer.
  • Warm the tortilla for 10–15 seconds in the microwave or on the air fryer tray (turned off) to make it more pliable and easier to fold.
  • Assemble the wrap: Lay the tortilla flat. Spread eggs in the center, leaving a 1–2 inch border. Top with cheese, bacon or sausage (if using), veggies, and a little salsa or hot sauce. Don’t overfill—the fold should be snug.
  • Fold tightly: Fold the sides in, then roll from the bottom up to create a burrito-style wrap. Press gently to seal.
  • Lightly crisp the outside: Brush the outside with melted butter or spritz with oil. This gives a golden, crunchy finish.
  • Air fry seam-side down at 375°F (190°C) for 3–4 minutes. Flip and air fry another 1 minute, or until the tortilla is crisp and the cheese is melted.
  • Rest and slice: Let the wrap sit for 1 minute to set. Slice in half if you like, and serve with extra salsa or a dollop of Greek yogurt.
