Pat the fish dry: Use paper towels to remove excess moisture from both sides. This helps the seasoning stick and prevents steaming.
Season: In a small bowl, mix garlic powder, paprika, onion powder, oregano, salt, and pepper. Rub tilapia with olive oil, then sprinkle the spice blend evenly on both sides. Add lemon zest if you like extra brightness.
Arrange in the basket: Lightly spray the air fryer basket with oil. Place fillets in a single layer, not overlapping. Work in batches if needed.
Air fry: Cook for 6 minutes at 400°F (200°C). Carefully flip, then cook 4–6 more minutes, depending on thickness. Thin fillets may be done in 9–10 minutes total; thicker ones may need the full 12.
Check doneness: The fish should flake easily with a fork and reach 145°F (63°C) in the thickest part. The flesh turns opaque and moist.
Finish with lemon: Squeeze fresh lemon juice over the fillets as soon as they come out. Garnish with parsley or cilantro if you like.
Serve: Pair with rice, quinoa, roasted potatoes, or a crisp salad. A quick yogurt-dill sauce or tartar sauce is great on the side.
