Prep the shrimp: Pat shrimp dry with paper towels. Dry shrimp brown better and won’t steam in the air fryer.
Mix the seasoning: In a bowl, combine garlic powder, paprika, onion powder, salt, black pepper, red pepper flakes, and oregano (if using).
Add lemon zest for brightness.
Toss with oil: Add shrimp to the bowl. Drizzle with olive oil and toss to coat. Sprinkle the seasoning mix over the shrimp and toss again until evenly coated.
Preheat the air fryer: Set to 390–400°F (200–205°C) for 3 minutes. Preheating helps prevent sticking and promotes even browning.
Arrange the shrimp: Place shrimp in a single layer in the basket.
A little spacing is ideal. If needed, cook in two batches.
Air fry: Cook for 5–7 minutes, shaking the basket or flipping once halfway. Shrimp are done when they’re pink, opaque, and slightly curled into a “C” shape.
Finish and serve: Squeeze fresh lemon over the shrimp.
Garnish with chopped herbs. Serve immediately.
