Ingredients
  

  • Bread: 2 slices sturdy sandwich bread (sourdough, multigrain, or whole wheat)
  • Deli turkey: 3–4 ounces, sliced (smoked or oven-roasted)
  • Cheese: 1–2 slices or 1/3 cup shredded (provolone, Swiss, cheddar, or pepper jack)
  • Spread: 1–2 teaspoons mayo, butter, or olive oil (for the outside); optional Dijon or honey mustard for the inside
  • Add-ins (optional): Tomato slices, thin red onion, spinach or arugula, pickled jalapeños, or roasted red peppers
  • Seasoning: Pinch of salt, black pepper, and a sprinkle of garlic powder or Italian seasoning (optional)
  • Hot honey or pesto (optional): For a flavor boost

Instructions
 

  • Preheat the air fryer: Set to 375°F (190°C) for 3 minutes. This helps the bread toast evenly and the cheese melt faster.
  • Prep the bread: Spread a thin layer of mayo or softened butter on the outside of each slice. This gives you a golden, crunchy exterior.
  • Add flavor inside: On the unbuttered side, spread a light layer of Dijon or honey mustard. Sprinkle a pinch of pepper and garlic powder if you like.
  • Layer the cheese and turkey: Place a slice of cheese on one piece of bread (inside facing up), add turkey in an even layer, then top with another slice of cheese. Cheese on both sides helps everything stick and melt beautifully.
  • Add optional extras: A few tomato slices, a handful of spinach, or thin onion adds freshness. Pat tomatoes dry first so the sandwich doesn’t get soggy.
  • Assemble: Close the sandwich with the second bread slice, buttered side facing out.
  • Air fry: Place the sandwich in the air fryer basket. Weigh it down lightly with a small, oven-safe rack or toothpicks if your air fryer tends to blow the top slice. Cook for 4–6 minutes total, flipping halfway. Aim for deep golden toast and fully melted cheese.
  • Check doneness: If the bread is browning faster than the cheese is melting, lower the temp to 350°F (175°C) and add 1–2 more minutes.
  • Finish and serve: Let it rest for 1 minute so the cheese sets slightly. Slice diagonally. Drizzle with a little hot honey or serve with a side of mustard if you like.
