Prep the shrimp: If using frozen shrimp, thaw under cold running water for 5–7 minutes. Pat very dry with paper towels.
Dry shrimp sear better and won’t steam.
Preheat the Ninja air fryer to 400°F (200°C) for 3 minutes: A hot basket helps build that light crust fast.
Season: In a bowl, toss shrimp with olive oil, garlic powder, smoked paprika, onion powder, salt, pepper, and cayenne if using. Coat evenly but don’t over-oil.
Load the basket: Arrange shrimp in a single layer with a little space between. Work in batches if needed.
Crowding leads to steaming.
Air fry: Cook at 400°F (200°C) for 5–7 minutes. Shake the basket or flip shrimp halfway through at the 3-minute mark.
Check doneness: Shrimp are done when opaque, pink, and slightly curled into a loose “C.” If they’re tight like an “O,” they’re overcooked. Internal temp should be around 120–125°F.
