Prep the air fryer: Preheat to 375°F (190°C) for 3–4 minutes.
Lightly spray the basket or line with parchment made for air fryers.
Mix a quick spread (optional): Stir mustard, mayonnaise, and honey in a small bowl. This adds moisture and flavor, but you can skip it for a simpler roll up.
Assemble with tortillas: Lay a tortilla flat. Spread 1–2 teaspoons of the sauce thinly, leaving a small border.
Layer 2 slices of ham and 1 slice of cheese. Season with a pinch of pepper.
Roll it tight: Tuck in the sides slightly, then roll up snugly like a burrito. Brush the outside lightly with melted butter or spritz with oil for extra crispness.
Or use crescent dough: Unroll dough, separate triangles, and layer half a slice of cheese and 1–2 slices ham on each.
Roll from wide end to point. Brush with egg wash and a light sprinkle of garlic powder or Italian seasoning.
Load the basket: Place roll ups seam-side down, leaving space between each for airflow. Work in batches if needed.
Air fry: Cook tortillas for 6–8 minutes, turning once halfway, until golden and the cheese is melty.
For crescent dough, cook 7–9 minutes, until puffed and deep golden.
Cool briefly: Let sit 2–3 minutes. This helps the cheese set and keeps the roll ups from unraveling when sliced.
Slice and pack: Cut into halves or thirds for lunchboxes. Include a small ice pack and any dips on the side.
