Prep the shrimp: Pat the shrimp dry with paper towels. Dry shrimp brown better and avoid steaming in the air fryer.
Season: In a bowl, toss shrimp with oil, Cajun seasoning, garlic powder, paprika (if using), a pinch of salt, and a few cracks of black pepper.
Add a little lemon zest for brightness.
Preheat the air fryer: Set it to 390°F (200°C) for 3 minutes. A hot basket helps the shrimp crisp at the edges.
Arrange: Lightly spray the basket if needed. Lay the shrimp in a single layer with space between them.
Cook in batches if necessary.
Air fry: Cook for 5 to 7 minutes, flipping once halfway. Shrimp are done when they turn pink and opaque with a slight curl into a “C” shape.
Finish: Squeeze fresh lemon juice over the shrimp and sprinkle with chopped parsley or green onions. Taste and add a pinch more Cajun seasoning if you want extra kick.
Serve: Enjoy immediately over rice, tucked in warm tortillas, on a salad, or alongside roasted veggies.
