Air Fryer BBQ Pulled Pork Bites – Crispy, Saucy, Crowd-Pleasing Snacks

Ingredients
  

  • 2 cups cooked pulled pork (seasoned, shredded, and mostly free of large fat pieces)
  • 1/2 cup BBQ sauce, plus more for serving
  • 1 large egg, beaten
  • 1/2 cup shredded cheddar or Monterey Jack (optional, for extra richness)
  • 1/4 cup finely diced onion or green onion (optional)
  • 1/2 cup panko breadcrumbs (for binding)
  • 3/4 to 1 cup panko breadcrumbs (for coating)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Pinch of salt (taste your pork first—some BBQ pork is already salty)
  • Cooking spray or a light drizzle of oil
  • Optional dips: ranch, chipotle mayo, honey mustard, or extra BBQ sauce

Instructions
 

  • Prep the air fryer: Preheat your air fryer to 375°F (190°C) for 3–5 minutes. This helps the bites crisp evenly from the start.
  • Mix the filling: In a bowl, combine the pulled pork, 1/2 cup BBQ sauce, beaten egg, shredded cheese (if using), diced onion (if using), 1/2 cup panko, smoked paprika, garlic powder, pepper, and salt. Stir until the mixture holds together when pressed.
  • Adjust texture: If the mixture feels too wet or loose, add a tablespoon or two more panko. It should be sticky but easy to shape.
  • Shape the bites: Scoop about 1 heaping tablespoon of the mixture and roll into small balls or form into nugget-shaped pieces. Aim for uniform size so they cook evenly.
  • Coat for crunch: Place 3/4 to 1 cup panko in a shallow bowl. Gently roll each bite in the panko to coat the outside. Press lightly so it sticks.
  • Oil lightly: Spray the air fryer basket with cooking spray or brush with a thin layer of oil. Place the coated bites in a single layer, leaving a little space between them. Lightly mist the tops with oil for better browning.
  • Air fry in batches: Cook at 375°F (190°C) for 8–10 minutes, turning halfway. They’re done when the coating is golden and crisp and the centers are hot.
  • Sauce and serve: Brush with a little warm BBQ sauce for glossy finish, or serve sauce on the side to keep the coating crisp. Add fresh green onions for color if you like.
