Preheat the air fryer: Set it to 375°F (190°C). If your air fryer has a preheat function, use it. If not, run it empty for 3–4 minutes.
Prep the chicken: Toss the cooked chicken with 2–3 tablespoons of BBQ sauce and a pinch of pepper.
This keeps it moist and flavorful.
Prep the crust: If using dough: Lightly flour your surface and shape the dough into 2 small personal pizzas, about 6–7 inches wide. Brush both sides with olive oil.
If using naan or flatbread: Brush one side with olive oil. No stretching needed.
Par-cook the crust (for dough only): Air fry the oiled dough rounds for 3–4 minutes, flipping halfway.
This firms the crust so it can hold toppings.
Assemble: Spread a thin layer of BBQ sauce on each crust. Add a generous layer of mozzarella and gouda. Scatter the BBQ chicken and red onion evenly on top.
Air fry: Return the pizzas to the basket.
Cook at 375°F for 5–7 minutes, until the cheese is melted and bubbly and the crust edges are golden. Check at the 4-minute mark to avoid over-browning.
Finish and serve: Drizzle with a bit more BBQ sauce if you like. Sprinkle with chopped cilantro.
Slice and serve hot.
